Blu Fish Sushi Bistro owner Chuck Choi spent the early part of his professional life in the jewelry business.

It took a career change, however, for the Glenview resident to find the gem he’d always been looking for.

“The restaurant business seemed glamorous,” Choi recalled. “Later, I realized that it’s a lot of hard work, and it’s not that glamorous. But at the end of the day, it’s very, very rewarding, and I enjoy it, and I love it.”
